Iron Bark is a mild distinct and dense honey from the blossoms of the Ironbark trees. Ironbark trees are eucalypt trees with black, deeply furrowed bark and strong durable timber with wide variations in leaf and flower sizes. All trees are uniquely Australian and widespread throughout eastern Australia. The main honey producing species are coastal grey ironbark, narrow leaf and broadleaf ironbark. Honey is considered to be one of nature’s finest energy-giving foods. It can contain up to 18 of the 20 amino acids. Honey is a highly concentrated source of many essential nutrients, including large amounts of carbohydrates (sugars), some minerals such as calcium, iron, zinc, magnesium, B-complex vitamins and vitamins C, D and E. It is a healthy natural alternative to processed sugars and artificial sweeteners. Honey is composed of two main sugars, levulose and dextrose, which are easily absorbed and used by the body. There are also many other minerals and vitamins in small quantities which give the honey its colour, flavour and physical properties. Australia is a great producer of honey due to its climate and vegetation, both of which provide two essential ingredients from which nectar is produced – warmth and blossoms. Our honey comes from specially selected areas of Australia’s vast mountain ranges. The dewfall is heavier in these areas, producing a superior class of clear, crisp, flavoursome honey.
